- 1 teaspoon ginger (grated)
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 2 bay leaves
- 1 teaspoon paprika or chili powder (optional, for heat)
- Salt (to taste)
- Vegetable oil (for cooking)
Instructions
- Wash and parboil the rice, then set aside.
- Blend tomatoes, red bell peppers, garlic, and ginger into a smooth paste.
- Heat vegetable oil in a pot and sauté the chopped onions until fragrant.
- Add tomato paste and fry for 2–3 minutes to remove its raw taste.
- Pour in the blended tomato-pepper mix and cook until the sauce thickens and oil begins to float.
- Season with curry powder, thyme, bay leaves, paprika (optional), and salt.
- Add chicken stock, stir, and bring the mixture to a boil.
- Taste and adjust seasoning if necessary.
- Add the parboiled rice into the sauce, mix well, and reduce the heat.
- Cover the pot with foil or a lid to trap steam.
- Cook on low heat until the rice is tender and absorbs the sauce.
- Stir occasionally to prevent burning at the bottom.
- Add a splash of stock or water if rice is still hard but the sauce has dried up.
- Once cooked, remove the bay leaves and fluff the rice with a fork.
